Ingredients for 1 servings:
- 2 handfuls of fennel – green
- 100 g Parmesan
- 100 ml olive oil
- 2 tbsp cashew nuts
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
for 2 glasses
Pick the fennel greens, roughly chop them, and place them in a tall container. Add the Parmesan cheese, cashews, and olive oil and puree with a hand blender. Pour the pesto into small jars and cover with a layer of olive oil. You can also freeze the jars or simply store them in the refrigerator. Makes about 2 jars.
