Smokey's Bean, Avocado, and Tomato Salad

Ingredients for 2 servings:

  • 400 g beans, green
  • 1 avocado(s)
  • 10 cherry tomatoes
  • 4 tomatoes, dried, preserved in oil
  • 1 small onion(s), chopped
  • 2 tbsp peanuts, chopped
  • 4 tbsp Balsamic vinegar, bianco
  • 3 tbsp olive oil
  • 3 tbsp broth
  • 1 tsp mustard
  • 2 clove(s) garlic, squeezed
  • 1 tsp oregano, dried
  • Pepper, from the mill
  • Salt

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

SiS-compatible

Cook the beans in salted water until tender, drain, and let cool slightly. Halve the tomatoes and dice the avocado. For the dressing, mix the ingredients well and add to the beans along with the onions and sun-dried tomatoes. Let stand for about 30 minutes. Mix in the tomatoes and avocado. Finally, add the peanuts. This salad goes well with smoked fish or cold roasts.
