Gnocchi – salad with carrots, beetroot, orange and nuts

Ingredients for 1 servings:

  • 200 g gnocchi from the refrigerated section
  • 1 beetroot, from the vacuum pack
  • 1 orange(s)
  • 1 large carrot(s)
  • salt and pepper
  • some pumpkin seeds or any other nuts
  • Balsamic vinegar
  • Oil (pumpkin seed oil)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cook the gnocchi in salted, boiling water until they float to the surface; drain. Finely dice the beetroot, grate the carrot, and segment the orange; place everything in a bowl. Add the gnocchi. Roast the pumpkin seeds in a dry pan and add them to the bowl. Season with salt and pepper and add a dash each of pumpkin seed oil and balsamic vinegar.
