Ingredients for 4 servings:
- 500 g pasta
- ½ jar tomatoes, dried in oil
- 1 m.-sized onion(s)
- 2 garlic cloves
- 2 tbsp tomato paste
- 2 tbsp balsamic vinegar
- 4 tbsp olive oil
- e.g. salt and pepper
- 1 handful of fresh basil
- e.g. mozzarella

Cook the pasta until al dente. Finely chop the tomatoes and onion. Either finely chop or press the garlic. Combine these and all other ingredients in a large bowl and mix. Feel free to add a little more of the tomato oil. You can add the basil leaves whole or chopped, depending on your preference. If everything seems too dry after adding the pasta, add a little more oil. Let it sit in the fridge for several hours or overnight. Season again with salt and pepper if necessary. If you like, you can also stir in mozzarella, but then the salad will no longer be vegan.
