McMoe's Wax Bean Salad

Ingredients for 4 servings:

  • 1 gr. jar wax beans
  • 5 tbsp herb vinegar
  • 4 tbsp sunflower oil or rapeseed oil
  • 2 tsp salt
  • some black pepper, freshly ground
  • 4 tsp sugar
  • 1 onion(s)
  • some parsley, chopped

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Drain the wax beans, reserving the bean liquid (should be about 1/4 liter). Peel the onion and finely dice it. Bring the bean liquid to a boil with the vinegar, oil, salt, sugar, and diced onion. Place the wax beans in a bowl, grind plenty of pepper over them, and pour the bean liquid dressing over them. Sprinkle with parsley. Let the salad marinate for at least 1 hour. It also tastes delicious lukewarm and goes very well with hamburger bread (see my recipes).
