Ingredients for 2 servings:
- 200 g mountain cheese, sliced
- 200 g cheese (Müritzer or another mild cheese), sliced
- 1 small can of peas
- 1 small can of corn
- 2 tbsp balsamic vinegar, light
- 4 tbsp sunflower oil
- Salt and pepper from the mill
- 3 shallots
- a few stalks of chives
- 3 tbsp water
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
with vinegar and oil
Combine vinegar, oil, salt, pepper, finely diced shallots, finely sliced chives, and the water in a bowl. Add the peas and corn along with the liquid from the can. Cut the sliced cheese into strips, add to the bowl, and mix well. Cover and refrigerate the salad for at least 2 hours. Mix thoroughly before serving, season to taste, and adjust seasoning if desired. Serve with hearty bread. Enjoy!
