Ingredients for 4 servings:
- 6 bell peppers, red, green, yellow
- 500 g cherry tomatoes
- 300 g cheese, Gouda
- 1 bunch of spring onions
- salt and pepper
- Herbs
- olive oil
- Vinegar
Instructions

Wash the peppers, remove the seeds, and cut into small cubes. Wash the cherry tomatoes and, depending on their size, either halve or quarter them. Remove the rind from the Gouda and cut it into bite-sized cubes. Chop the spring onions and place them in a bowl with the peppers, tomatoes, and Gouda. Season with salt and pepper, olive oil to taste, and a small splash of vinegar. Finally, sprinkle with herbs (frozen or fresh). Parsley and chives are particularly suitable, but basil or a frozen mix is also suitable. This makes a delicious salad for grilling, but is also suitable as a side dish to almost any other dish. It also tastes great with just baguette. Tip: It’s best to use the cheese while it’s cold from the refrigerator and only add it to the salad at the end, mixing it in carefully.
