Ingredients for 1 servings:

  • 1 large organic lemon(s), about 210 g
  • 20 g salt

Instructions

Seasoning paste, quick to make

Wash the lemon thoroughly. Trim both ends and slice the lemon into thin slices. Remove the seeds. Place the lemon slices and salt in a food processor and grind to a fine paste. Pour the mixture into two hot, rinsed jars and refrigerate. Always scoop out a little from the jar with a clean spoon. The paste is suitable for seasoning anywhere a little acidity and salt are needed. Use 10g of salt for every 100g of lemon. Since nothing is sterilized, the paste may ferment slightly even in the refrigerator.
