Sweetened basil pesto with buffalo mozzarella and citrus fruit fillets

Ingredients for 5 servings:

  • 50 g fresh basil, approx.
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • 3 tsp honey
  • ½ tbsp pine nuts
  • 1 tbsp olive oil
  • 150 g buffalo mozzarella
  • 2 oranges
  • 1 grapefruit(s)
  • ½ pomelo(s)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

For the pesto, roast the pine nuts in a dry pan until light brown. In a mortar and pestle, combine the roasted pine nuts with the basil, lemon zest, honey, and oil. Season with lemon juice and additional honey, if desired. Peel the pine nuts and cut into fillets. Tear the mozzarella into bite-sized pieces. Arrange everything attractively on plates and drizzle with the pesto. The pesto tastes best when ground in a mortar and pestle, but can also be made in a blender.
