Mirabelle mustard

Ingredients for 1 servings:

  • 4 tbsp mustard flour, or mustard seeds
  • 1 tsp salt
  • 5 tbsp white wine vinegar
  • 75 g brown sugar
  • 25 g sugar, white
  • 400 g mirabelle plums

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 22 minutes

Wash, stone, and puree the mirabelle plums. If using mustard seeds, pulverize them. This works best in a coffee grinder. If you bought mustard flour, you can skip this step. Mix all ingredients together, puree, bring to a boil, and simmer gently for about 5 minutes. If necessary, puree even more finely at the end. Pour into jars while still hot and seal immediately. To prepare in the Thermomix: Place all ingredients (mustard already powdered) in the mixing bowl on speed 10 and puree for 30 seconds on speed 6-7. Then boil for 5 minutes at 100°C on speed 2. Pour into jars and seal quickly.
