Ingredients for 4 servings:
- 500 g pasta, e.g. farfalle
- 1 kg asparagus, green
- 4 garlic cloves
- 2 red chili peppers
- 250 g mushrooms
- 8 tbsp Parmesan, freshly grated and sliced
- salt and pepper
- olive oil

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
Peel the bottom third of the asparagus, trim the ends, and cut the stalks into pieces. Slice the garlic and chili. Clean and quarter the mushrooms. Blanch the asparagus pieces in boiling salted water for about 5 minutes, then rinse with cold water. I always collect the asparagus water and then cook the pasta in it according to the package instructions. Heat olive oil in a pan and briefly fry all the vegetables until crisp. Then toss the vegetables with the pasta and sprinkle everything with Parmesan cheese.
