Chocolate-Vanilla Muffins

Ingredients for 1 servings:

  • 175 g flour
  • 2 packs of pudding powder, vanilla
  • 200 g chocolate, chopped
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 100 g sugar, possibly up to 150 g
  • 1 packet of vanilla sugar
  • 100 g butter, very soft
  • 100 g yogurt, vanilla or natural
  • 100 g sour cream
  • 2 eggs
  • 5 drops butter-vanilla flavoring

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 180°C and grease muffin tins well. Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. In a bowl, beat the egg yolks with the sugar and vanilla sugar for about 2 minutes. Add the warm butter and beat for another 2 minutes. Stir in the sour cream, yogurt, and vanilla extract. Mix the flour, baking powder, pudding powder, and baking soda well and fold in briefly. (Just until everything is well distributed.) Fold in finely chopped chocolate (dark, milk, etc. to taste), along with the beaten egg whites. Pour the batter 3/4 full into the muffin tins and bake for about 25 minutes at 175°C (top/bottom heat). Let the muffins rest in the tins for 5 minutes. This makes about 12 muffins, depending on how full the tins are. You can omit the sour cream completely and double the amount of yogurt instead.
