Parma rolls with ricotta, arugula and balsamic vinegar

Ingredients for 2 servings:

  • 8 slice(s) Parma ham, or Serrano-
  • ½ cup ricotta
  • 40 g Parmesan, freshly grated
  • e.g. arugula
  • 1 tbsp olive oil
  • 1 pinch(s) of pepper
  • n. B. Balsamic vinegar cream

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Lay out thinly sliced ​​Parma ham. Mix freshly grated Parmesan with the ricotta and season with a little freshly ground pepper. If you don’t like it too hearty, you can omit the Parmesan. Spread the ricotta evenly over the ham. Spread fresh, crisp arugula (pick off the stalks first) over the ham and roll it up. The rolls can generally be eaten immediately, but an hour in the refrigerator (covered with plastic wrap) doesn’t hurt either. Decorate the rolls according to your personal taste. I particularly like to brush the rolls with a little good olive oil before serving and spread balsamic vinegar on the serving plate. A glass of dry Italian red wine goes well with this, of course.
