Chocolate sparkling wine cake

Ingredients for 1 servings:

  • 100 g butter
  • 100 g sugar
  • 1 tbsp vanilla sugar
  • 7 eggs, separated
  • 300 g almonds
  • 100 g chocolate, grated (milk or dark chocolate to taste)
  • 1 tsp baking powder
  • 6 cl brandy
  • 2 bottles of sparkling wine (piccolo)
  • 2 pts. Cream powder (lemon cream without cooking)
  • ½ liter cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chocolate-almond base with lemon cream filling

Mix the butter with the sugar, vanilla sugar and egg yolks. Add the almonds, chocolate, baking powder and brandy and mix everything well. Beat the egg whites until stiff and carefully fold the beaten egg whites into the almond mixture. Pour the batter into a greased dish and bake at 150°C for approx. 1 hour. After baking, let the base cool and then cut it in half. Mix the sparkling wine with the cream powder and stir until the cream is firm enough to slice. Whip the cream until stiff and fold it into the lemon cream. Spread half of the cream on the bottom layer. Place the top layer on top and spread with the remaining cream. If you like it a little fruitier, you can also add finely chopped fruit such as pineapple or peaches to the cream.
