Apple muffins

Ingredients for 1 servings:

  • 300 g butter or margarine
  • 500 g flour
  • 4 tsp baking powder
  • 4 m.-sized eggs
  • 400 g crème fraîche or sour cream
  • 250 g sugar, according to taste
  • 4 medium-sized apples, diced
  • n. B. Paper cups

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Makes about 36 pieces – if that’s too much, just make half

Preheat the oven to 160°C (fan oven, top/bottom heat: 180°C). Cut the butter into small pieces and melt in a small saucepan over low heat. Mix the flour with the baking powder. Then beat the eggs with the crème fraîche and sugar until smooth. Slowly add the melted butter. Peel the apples, quarter them, core them and cut them into small cubes. Finally, quickly stir in the flour mixture. If the mixture is too thick, add a little milk. Finally, stir in the apple pieces. Line a 12-hole muffin tin with paper cases. Pour the batter into the cases and bake in the middle of the oven for approx. 25 minutes. Remove from the oven, let cool briefly and then let the muffins cool completely on a wire rack.
