Meat marinade for grill or oven

Ingredients for 4 servings:

  • 4 tbsp olive oil or oil for frying
  • 3 tbsp soy sauce
  • 1 tbsp Provençal herbs or roast herbs
  • ½ tsp white pepper
  • 1 tsp paprika powder
  • 2 cloves garlic

Instructions

Working time approx. 5 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 5 minutes

Mix all ingredients together, making sure to crush the garlic cloves. Brush the mixture onto all sides of the meat and let it marinate in the refrigerator for several hours, or overnight if desired. These ingredients are enough for one large roast, or two fillets, or four chicken or turkey breasts. The quantities can be easily adjusted to suit your taste. I’ve been using this marinade for years because it’s unbeatably delicious on the grill or in the oven. When grilling, remember to sear the meat briefly on all sides over direct heat and then cook it over indirect heat, depending on the thickness of the meat, otherwise the herbs in the marinade will burn and turn black.
