Ingredients for 4 servings:

  • 1 liter olive oil
  • 4 garlic cloves
  • 1 bunch rosemary
  • 1 bunch of thyme
  • 1 tbsp pepper, mixed
  • 1 chili pepper(s)
  • 1 tsp, heaped chili pepper(s), dried

Instructions

Working time approx. 20 minutes; Rest period approx. 7 days; Total time approx. 7 days 20 minutes

Wash all fresh herbs and pat dry. Otherwise, the olive oil could become cloudy. Rinse a glass bottle with a cap and let it dry. Finely slice the garlic and then add it to the bottle along with the mixed peppercorns and dried chili peppers. Now arrange the thyme and rosemary sprigs, as well as a fresh chili pepper, if desired, in the bottle. Fill the bottle with olive oil and cork. Let it steep for 1-2 weeks. After opening, strain the herbs and use the oil quickly. This chili herb olive oil makes a great gift. The quantities can be varied as desired.
