Coarse tarragon mustard

Ingredients for 1 servings:

  • 50 g mustard seeds, yellow
  • 10 g onion(s)
  • 4 g salt
  • 2 black peppercorns
  • 10 g sugar
  • 1 pinch(s) chili, optional
  • 30 g balsamic vinegar bianco, 5.4%
  • 40 g water
  • 4 sprig(s) tarragon, small sprigs, fresh or 0.5 tsp dried

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Grind the mustard seeds. Finely chop the onion, or better yet, press it through a sieve. Crush the peppercorns or grind them with the mustard seeds, as desired. Finely chop the tarragon. Sauté the onions in the water for a while and add the vinegar. Now add the remaining ingredients, except the tarragon, and simmer briefly. Near the end, add the finely chopped or shredded tarragon. Pour into sterile jars. A piece of wax paper soaked in liquor between the jar and the lid will extend the shelf life.
