Ingredients for 1 servings:

  • 15 g cashew nuts
  • 1 tbsp olive oil
  • 50 ml balsamic vinegar, white
  • 100 ml apple juice
  • 100 ml water
  • 125 g raspberries
  • 1 pinch(s) of pepper
  • 1 pinch of salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the 15g of cashews and the oil in a tall bowl, add water, and blend until cashew nut cream forms. The mixture will be crumbly to creamy, depending on your appliance. Both are delicious. The creamier, the better. Add the raspberries, apple juice, and balsamic vinegar and blend. Season with salt and pepper. For a more runny vinaigrette, add apple juice and balsamic vinegar in a ratio of 1:10, so that the balsamic vinegar has a minimal bite on the tongue. Tip: A simple salad (tomato, cucumber, romaine lettuce) is sufficient, as the raspberry vinaigrette has a very strong flavor of its own. Sprinkle 100g of cashews over the salad and serve with the dressing.
