Ingredients for 4 servings:
- 250 g pasta
- 8 tomatoes
- 1 bell pepper(s)
- ½ cucumber(s)
- 1 shallot(s)
- 1 ball of mozzarella
- some basil and/or dill
- 6 tbsp rapeseed oil
- 3 tbsp vinegar
- some Parmesan, grated
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
simple, quick and super easy, as there is no mayonnaise
Cook pasta according to the instructions. Meanwhile, chop the tomatoes, bell peppers, cucumber, mozzarella, and shallots. Drain the pasta and add it to a bowl with the vegetables. For the dressing, combine the oil, vinegar, grated Parmesan cheese, a little water if desired, and salt and pepper in a small bowl. Toss the dressing with the salad. Garnish with herbs such as basil and/or dill.
