Micha's spaghetti salad

Ingredients for 4 servings:

  • 250g spaghetti
  • 4 tbsp balsamic vinegar
  • 2 cloves garlic
  • 10 cherry tomatoes
  • 1 mozzarella
  • 80 g arugula
  • some basil leaves
  • salt and pepper
  • 2 tbsp olive oil

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes

Cook the spaghetti until al dente and then rinse in cold water. Immediately chop it into small pieces and toss with 2 tablespoons of olive oil. Dice the mozzarella. Cut the cherry tomatoes in half, tear the arugula into small pieces. Finely chop the garlic. Add the balsamic vinegar to the spaghetti and mix everything together. Season to taste and sprinkle with a few basil leaves. It tastes absolutely delicious. We always eat it with baguettes.
