Ingredients for 1 servings:

  • 250 g flour, type 405
  • 100 g almond(s), ground without skin
  • 125 g butter
  • 125 g sugar
  • 1 tsp baking soda
  • ½ point speculatius spice
  • 1 m.-sized egg(s)
  • 3 tbsp milk
  • 1 tsp honey
  • some powdered sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Knead all ingredients, except the powdered sugar, into a smooth dough. Shape the dough into a log, wrap in foil, and let it rest in the refrigerator for at least two hours. Then cut off walnut-sized pieces, roll them into balls, and place them on a baking sheet lined with baking paper. Leave some space between the balls. Flatten the balls with a fork and bake at approximately 180°C for 10 minutes. The balls should be a golden brown. Cool on a wire rack and then dust with powdered sugar. If you want a stronger speculatius flavor, feel free to use a little more of the spice.
