Ingredients for 9 servings:
- 200 g flour
- ½ tsp baking powder
- 1 pinch of salt
- 4 eggs
- 200 g margarine or butter
- 100 g sugar
- 1 lemon(s), grated peel
- 1 tbsp rum
- oil
- Powdered sugar, for dusting
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Beat all ingredients (except the rum) with a hand mixer until smooth, then add the rum last. Preheat the waffle iron and brush with oil if desired. Pour 1-2 tablespoons of batter into the center of the waffle iron, spread evenly, and bake. Bake for about 1 minute (for soft waffles) or 1.5 minutes (for crispy waffles). Sprinkle waffles with powdered sugar to taste. Serve warm or cold.
