Peel, halve, and core the pears. In a large saucepan, mix the sugar with the white wine and bring to a boil while stirring. Then add the pear halves and simmer for 15-30 minutes. The ripeness of the pears is crucial; you should check them from the 15-minute mark. It’s best to pierce them with a small, sharp knife and check whether the pears are soft. They should still be firm and not overcooked. The pears and syrup now make a delicious dessert that can be served as is, or with semolina pudding. Another variation is to serve the drained pears with a scoop of vanilla ice cream and chocolate sauce. You can also reuse the pears if a recipe calls for canned pears. Remove the pears from the syrup and use them for another purpose. Pour the syrup into a bottle and use it as a dessert sauce. It will keep well over a week in a sealed bottle in the refrigerator.
