Ingredients for 4 servings:
- 2 Pkt. Tortellini , with spinach or cheese filling, fresh, chilled
- 500 g asparagus, green
- 2 spring onions
- 1 garlic clove(s)
- 50 g butter
- 250 g scampi or smoked turkey fillet
- 50 g Parmesan
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Peel the lower third of the asparagus and set the heads aside. Cut the remaining stalk into 2 cm pieces. Cook the tortellini with the asparagus pieces (approx. 8-9 minutes). Meanwhile, slice the spring onions, dice the garlic, and sauté both in butter. Add the scampi or turkey breast cubes and the asparagus heads. Stir-fry for 4 minutes, then season with salt and pepper. Mix with the tortellini and asparagus pieces, season to taste, and sprinkle with shaved Parmesan cheese.
