Ingredients for 2 servings:
- 1 handful of noodles (sweet potato noodles)
- 2 carrots
- 3 tomatoes
- ½ onion(s)
- 100 g minced meat
- ½ can coconut milk
- some curry powder
- some salt
- some pepper

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Paleo
First, peel and dice the carrots, then boil them in salted water. If you prefer hard carrots, you can skip this step. Then boil the sweet potato noodles in the carrot water or in regular salted water. Meanwhile, sauté the carrots with the minced meat and onion, and finally add the tomatoes to the pan. Then pour in the coconut milk and season with salt, pepper, and curry powder. P.S.: If you don’t have sweet potato noodles, or can’t get hold of them, you can simply peel thin strips from a sweet potato with a vegetable peeler, boil them briefly, and then sauté them with the vegetables.
