Curry cream noodles with minced meat

Ingredients for 4 servings:

  • 250 g pasta, e.g. penne
  • 250 g carrot(s), diced
  • 1 onion(s)
  • 1 leek(s)
  • 1 tbsp oil
  • 500 g minced meat, mixed
  • salt and pepper
  • 1 tbsp curry powder
  • 200 g whipped cream
  • 125 ml broth
  • Parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook the pasta in plenty of boiling salted water according to the package instructions until al dente. About 5 minutes before the end of the cooking time, add the diced carrots. Drain everything very well. In the meantime, finely dice the onions. Halve the leek lengthwise and cut into thin rings. Then wash thoroughly in a sieve under running water and drain well. Heat the oil in a pan. Brown the minced meat vigorously, turning occasionally. Season with salt and pepper. Remove from the pan and set aside. Sauté the onions in the frying fat until translucent. Add the leek and sauté for about 5 minutes. Season with the curry powder and deglaze with the cream and stock. Let it reduce slightly. Mix in the pasta and minced meat and season to taste. Wash the parsley, shake dry, and finely slice it. Sprinkle it over the minced meat pan before serving.
