Ingredients for 4 servings:
- 4 large potatoes, floury
- 1 tbsp clarified butter
- 1 small onion(s)
- 200 g minced beef
- salt and pepper
- 1 large beefsteak tomato(s)
- 1 tbsp chives, in rings
- 4 tbsp cheese, grated
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Wash the potatoes thoroughly enough so that you can eat the skins. Then wrap each potato individually in foil. Press the foil firmly against the potatoes. Place the foil packets on a rack and cook in the oven at 200 to 225 degrees Celsius for 60 minutes. Meanwhile, heat the clarified butter in a pan and sauté the diced onions until translucent, stirring occasionally. Add the minced meat to the pan and cook for 5 to 7 minutes. Season the onion and meat mixture with salt and pepper. Finely chop the tomato flesh. Remove the cooked potatoes from the oven using potholders. Cut crosses into the potatoes in the foil and press them apart. First pour the minced meat mixture into the resulting openings, then arrange the diced tomatoes on top, sprinkle with chives and cheese. Then place the potatoes in the oven until the cheese has melted.
