My chicken broth gives me wings

Ingredients for 6 servings:

  • 1 onion(s)
  • 4 cloves
  • 2 sprigs of thyme
  • 2 bay leaves
  • 1 soup chicken, 2.5 – 3 kg
  • 1 tbsp black peppercorns
  • 5 juniper berries
  • 2 tbsp salt
  • 1 kohlrabi
  • 2 carrots
  • 1 small celery
  • 2 parsley roots
  • 1 leek(s)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 4 hours; Total time approx. 4 hours 30 minutes

Halve the unpeeled onion and sear it vigorously on the cut side in a little fat. Slowly bring the chicken and all the spices to a boil in cold water. About 6 liters. Then simmer at a boil for about 3 hours. Add the cleaned and roughly chopped vegetables and simmer for another hour. Let the soup cool and use as desired. I then freeze portions, clear broth and meat.
