Fine lily blossom soup

Ingredients for 4 servings:

  • 1 chicken (soup chicken), alternatively 1 – 2 drumsticks
  • 1 handful of dried lily blossoms (available in Asian stores)
  • 3 handfuls of glass noodles
  • possibly salt
  • possibly sugar
  • Water, hot

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Chinese family recipe

Simply boil the chicken with salt. Reserve the cooking broth. Place the lily blossoms in a cup or small bowl of hot water, soak for at least half an hour, and then let cool. Drain the blossoms. Collect the soaking water, run it through a coffee filter if desired, and set it aside. Trim the knobby ends of the blossoms and, if desired, add a decorative knot to each blossom. Remove the chicken from the bone and chop it up. Place equal parts hot water and chicken broth into a pot, add the lily blossoms and glass noodles, and bring to a boil. Then add the chopped chicken pieces and the soaking water from the lily blossoms. Season to taste with salt and a pinch of sugar, if desired.
