Ingredients for 4 servings:
- 4 duck breasts with skin
- salt and pepper
- some butter
- some vegetable oil

Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat the oven to 80°C using top/bottom heat – use an oven thermometer, as the heat must be precisely adjusted and the success of the breasts depends on it. Score the skin of the duck breasts in a diamond-shaped pattern down to the meat. Caution!!: Only cut into the skin, not into the meat. Now, brown the breasts in butter and oil on the skin side for about one to two minutes at 3/4 heat, then turn and brown on the meat side for about half a minute to one minute – do not let it get too hot!!!. Remove the breasts from the pan and place in an oven dish. Now season generously with salt and pepper on both sides. For perfect results, the heat must (!) be strictly controlled and maintained during cooking in the oven – otherwise the cooking time will be considerably longer. It is best to preheat the oven well – add the duck breasts quickly – and set a timer. Now place the breasts in the oven for about 45-50 minutes and keep the oven door closed (!). I think a spicy chili sauce or a fruity mango chutney goes very well with it.
