Garlic Duck

Ingredients for 4 servings:

  • 1 duck(s)
  • 2 bunches of parsley
  • 50 g butter
  • 20 cloves garlic
  • salt and pepper
  • olive oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Bring the duck to room temperature, season well inside with salt and pepper, and place the parsley (whole), butter, and peeled garlic cloves inside. Carefully brush the outside of the duck with olive oil (I do it by hand). Cook in a preheated oven for 30 minutes at 220 degrees Celsius, then for 2 hours at 160 degrees Celsius. Prick occasionally to render the fat.
