Ingredients for 2 servings:

  • 600 g potatoes, cooked
  • 1 red bell pepper(s)
  • 1 cucumber(s)
  • ½ bunch of spring onions
  • 2 tbsp sour cream
  • 2 tbsp mustard
  • 4 tbsp sour cream
  • 4 tbsp herb vinegar
  • 1 pinch(s) of sugar
  • salt and pepper

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Slice the potatoes. Wash the bell peppers, cucumber, and spring onions. Deseed the bell peppers and dice the cucumber, then slice the spring onions into rings. For the dressing, combine the mustard, sour cream, vinegar, and sugar, and season with salt and pepper. Pour the dressing over the salad and let it sit for about 1 hour. Season the potato salad to taste and serve sprinkled with pepper.
