not so sweet and fatty, for about 80 croissants

Combine all ingredients in a large bowl and knead thoroughly. This is best done by hand. Refrigerate for at least an hour or overnight. Shape the dough into croissants and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 200°C for about 10 minutes, until light brown. Mix the powdered sugar and vanilla sugar. Sprinkle the powdered sugar over the warm cookies, let them cool for 5 minutes, and then roll them in the sugar mixture. The croissants taste best the next day.
