Ingredients for 5 servings:
- 500 g tuna
- 2 spring onions
- 1 mango(s), fresh
- 2 avocados
- 2 tbsp mango puree
- 1 orange(s), freshly squeezed juice
- 4 tbsp grainy mustard
- 1 lemon(s), freshly squeezed juice
- 1 tbsp agave syrup
- salt and pepper
- chili flakes
- Cress, various, for decoration

Finely dice the tuna, avocado, and mango. Slice the spring onions into small rings and toss with the tuna. Then prepare a sauce with mango puree, orange juice, lemon juice, grained mustard, and agave syrup. Season with salt, pepper, and a little chili, and stir some of it into the tuna. Use the rest later as a sauce. To serve, layer the avocado, mango, and tuna into a tower. Drizzle with the sauce and top with cress.
