Ingredients for 2 servings:
- 2 smoked trout fillets
- 1 half honeydew melon(s)
- 1 avocado(s)
- 6 radishes
- some basil leaves
- 1 half lemon(s)
- Pepper, coarsely ground black
- Cayenne pepper
- Salt
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Deseed half a honeydew melon and cut it into eighths. Score two eighths along the rind and cut the remaining flesh into small pieces. Squeeze the lemon. Halve, pit, and peel the avocado. Rub it with lemon juice. Cut one half into thin slices and dice the rest. Slice the radishes and finely chop the basil leaves. Halve one trout fillet and cut the rest into small pieces. Place each melon strip, peel on, upright on a plate and sandwich the avocado strips between them. Place half a trout fillet next to it. Mix the rest and season with lemon juice, salt, coarsely ground pepper, and cayenne pepper.
