Tuna tartare with egg and chives

Ingredients for 2 servings:

  • 300 g tuna (sushi quality)
  • 2 eggs, size M, very fresh
  • 1 bunch of chives
  • 4 spring onions
  • ½ tsp fish sauce
  • ½ tsp sesame oil, dark
  • e.g. salt and pepper
  • n. B. Wild garlic

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Finely slice the chives and spring onions. Cut the tuna into small cubes with a knife. Mix the tuna with the onion rings, chives, and fish sauce. Season with salt and pepper. Place the tartare on a plate and drizzle with a little dark sesame oil. Make a small hollow and place the egg yolk in it. Mix the egg yolk with the tartare at the table. Tip: You can also mix wild garlic into the tartare.
