Marinated salmon with a twist

Ingredients for 4 servings:

  • 600 g salmon fillet(s), fresh
  • 2 lemons, squeezed
  • Salt
  • 2 tbsp pepper, green
  • 2 shallots, finely chopped
  • olive oil
  • e.g. Dill, fresh or dried

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

First, slice the salmon fillet into wafer-thin slices using a very sharp knife and arrange them side by side on a large, flat serving platter. Drizzle with lemon juice and let rest for about 10-15 minutes. Season with salt to taste, scatter the shallots and green pepper over the salmon, and drizzle with olive oil evenly. Garnish with dill, if desired. Serve immediately. Tip: The salmon is easier to slice if frozen first.
