Stuffed peppers vegetarian

Ingredients for 4 servings:

  • 4 large bell peppers
  • 1 onion(s)
  • 2 stalks of lemongrass
  • 1 cheese (grilled cheese)
  • 4 pinches of pepper
  • 4 pinch(s) curry powder
  • 2 cups couscous
  • 2 cups water
  • 200 ml tomato sauce
  • 4 stalks of spring onion(s)
  • 3 tbsp olive oil
  • possibly garlic

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

For the filling, pour boiling water over the couscous and let it steep. Finely chop the onion and spring onions, including the green parts if they aren’t wilted. Quarter the lemongrass stalks lengthwise and then slice very thinly. The smaller the better. Cut the grilled cheese into small cubes (approx. 5 mm edges). Add the chopped ingredients and olive oil to the couscous and mix everything well. Add pepper and curry powder. If desired, add garlic to taste. Mix everything well. Cut open the tops of the peppers with a small knife and then scrape out the seeds and ribs with a teaspoon. Fill the peppers with the filling and press down firmly. Steam the stuffed peppers for 20-25 minutes. Serve with the hot tomato sauce.
