Ingredients for 2 servings:
- 1 onion(s)
- 2 can/n tomatoes, chunky
- 2 bell peppers, red
- 350 g feta cheese (not shepherd’s cheese!)
- 1 cup rice
- 1 bay leaf
- n. B. water
- some curry powder
- some butter
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Finely chop the onion and bell peppers, then fry the onion in butter. When the onions are translucent, add the bell peppers. Then add the canned tomatoes and season with salt and pepper. Finally, crumble in the feta cheese and let it simmer. The meal is complete when you can’t see any of the feta cheese. It’s very important that it’s real feta cheese and not sheep’s cheese. You can prepare the rice while it’s cooking. Melt the butter in a saucepan and fry the rice in it. Then deglaze the rice with a cup of water, add a bay leaf, and season with curry powder. Keep adding more water as needed. When the rice is ready, remove the bay leaf and serve.
