Ingredients for 4 servings:
- 1 kg chicken legs or wings
- 6 potatoes
- 2 tsp mustard
- 1 cup water
- 1 cup olive oil
- 1 garlic clove(s)
- 1 lemon(s)
- oregano
- Thyme
- Salt and pepper, white
- Paprika powder
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 35 minutes
Wash the chicken thighs and pat dry. Cut the potatoes into fairly thin slices. Arrange the potatoes and chicken on a baking sheet. Season with salt, pepper, paprika, oregano, and thyme. Mix the olive oil, mustard, crushed garlic clove, lemon juice, and water well. Spread the oil, mustard, and lemon mixture evenly over the potatoes and chicken thighs. Roast in the oven at 180°C (top/bottom heat) for 1 hour. Stir the potatoes occasionally to prevent them from sticking to the baking sheet.
