Ingredients for 3 servings:
- 500 g jacket potatoes, from the previous day
- 4 tomatoes
- 2 zucchinis
- 4 tbsp vinegar (herb vinegar)
- 2 tsp herbs de Provence
- 2 tsp mustard, hot
- Salt
- 8 tbsp oil (shallot-chili-garlic oil)
- 1 onion(s)
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Peel the potatoes and dice them, along with the tomatoes and zucchini. Finely chop the onion. Mix everything together. Blend the sauce ingredients vigorously with a hand blender, stir into the salad, and let it sit for about 2 hours.
