Spicy potato salad with mustard marinade

Ingredients for 4 servings:

  • 1 kg potatoes
  • 3 onions
  • 100 g smoked bacon
  • ¼ liter broth, clear (instant)
  • 3 tbsp vinegar
  • 2 tsp mustard, grainy
  • some salt and pepper
  • 3 stalk(s) Celery

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the potatoes and boil for about 20-25 minutes. Peel the potatoes and let them cool slightly. Peel and slice the onions. Cut the bacon into strips. Fry in the pan until crispy. Add the onions and sauté briefly. Deglaze with stock and vinegar. Season the marinade with mustard, salt, and pepper. Cut the potatoes and place them in a bowl. Pour the warm mustard marinade over them. Cover and let it marinate for about 30 minutes. Trim, wash, and thinly slice the celery. Carefully mix it into the potato salad. Season again with salt and pepper before serving.
