Ingredients for 1 servings:

  • 3 m.-sized eggs
  • 250 g low-fat curd cheese
  • 100 g almonds, ground
  • 2 tbsp whole wheat flour
  • 1 tsp salt
  • 100 g flaxseed meal
  • 2 tbsp chia seeds
  • 4 tbsp sunflower seeds
  • 1 packet of baking powder
  • 1 tsp bread spice mix
  • n. B. grains for decoration

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Combine the dry ingredients, then add the eggs and low-fat quark and mix. Pour the batter into a greased or parchment-lined loaf pan and sprinkle with seeds, if desired. Without the pan, the bread would spread considerably. Bake at 180°C (top/bottom heat) for about 45 minutes. This recipe is highly adaptable and can be adapted to personal taste or what you have in stock. The flaxseeds can be partially replaced with the same amount of sesame seeds. Similarly, the sunflower seeds can be replaced with pumpkin seeds. You can also replace the eggs with twice the number of egg whites—for example, use six egg whites instead of three.
