Spaghetti with shrimp and coconut sauce

Ingredients for 2 servings:

  • 3 spring onions, cut into rings
  • 3 large tomatoes
  • 150 g shrimp(s)
  • 200 ml coconut milk
  • salt and pepper
  • possibly chili powder
  • curry powder
  • n. B. herbs, French
  • 350 g spaghetti or other pasta
  • Water (salt water), boiling
  • some oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Add the pasta to the salted water and cook for about 10 minutes. Sauté the sliced ​​spring onions and the shrimp (seasoned lightly with salt and pepper) in the oil, then add the chopped tomatoes and simmer for a while. Season with salt, pepper, French herbs, and curry powder. Then deglaze with the coconut milk. Let the sauce reduce slightly and season again with the spices. A little chili also works well.
