Pasta with grilled tomatoes, pine nuts, raisins and anchovies

Ingredients for 4 servings:

  • 500g pasta
  • 60 g anchovies
  • 2 tbsp tomato paste
  • 50 g raisins
  • 50 g pine nuts
  • 4 tomatoes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Place the raisins in warm water and drain after 30 minutes. Meanwhile, grill the tomatoes in a preheated oven at 220°C on the top rack for 10 minutes. Remove, let cool, peel, and dice. Heat the diced tomatoes, raisins, and pine nuts in a saucepan. Add 2 tablespoons of tomato paste and the anchovies. Simmer for about 4-5 minutes. Add salt to taste. Cook the pasta according to the instructions and add it to the sauce at the end.
