Spicy Chorizo ​​pan with Parmesan Potato Wedges and Sour Cream

The perfect spicy chorizo ​​pan with parmesan potato wedges and sour cream recipe with a picture and simple step-by-step instructions.

Potato wedges:

  • 2 Onions
  • 10 g Garlic
  • 100 g Colorful peppers
  • 2 Red chillies
  • 80 g Leek
  • 100 g Fine frozen peas
  • 160 g Green bean sections
  • 6 tbsp Olive oil
  • 50 g Paprika pulp
  • 3 tbsp Tomato paste
  • 150 ml Red wine
  • 250 ml Water
  • Salt, 1 tbsp sugar
  • 600 g Potatoes
  • 1 tbsp Paprika pulp
  • 10 tbsp Olive oil
  • Salt
  • 40 g Panko flour
  • 30 g Grated Parmesan

Sour creme:

  • 150 g Creme fraiche Cheese
  • 3 tbsp Lemon juice
  • 2 tsp Sugar
  • Pepper salt

Preparation:

  1. Peel and quarter the onion, halve the quarters 1 more time and leaf apart. Skin the garlic, roughly chop. Wash the peppers, remove the stalk, cut in half, core and cut into large pieces. Wash the chillies, remove the stalk, cut in half, core and cut the halves into fine strips. Wash and clean the leek and cut into fine slices. Scald frozen peas with boiling water, allow to steep and drain. If the bean sections were also frozen, do the same. Skin the sausage and cut into slices.
  2. Wash the potatoes, cut in half lengthways and cut the halves into 3 wedges. Mix 10 tablespoons of oil, 1 tablespoon of paprika pulp and salt in a larger bowl and marinate the potato wedges in it. Let it steep for at least 1 hour and stir several times in between. Mix the grated Parmesan with the panko flour and keep ready.
  3. Stir the crème fraîche with lemon juice until creamy and season with sugar, salt and pepper. Let it steep in the refrigerator.

Completion:

  1. Preheat the oven to 200 °. Lift the potatoes out of the marinade, drain only very slightly and place on the baking sheet. Put the tray in the middle of the oven. Cooking time 20 – 30 minutes. After 10 minutes, sprinkle the Parmesan crumbs over the slices to finish cooking the potatoes and let them become crispy. Turn the heat down to 180 °.
  2. While the potatoes are cooking, heat 6 tablespoons of olive oil in a pan. Sweat the onions, garlic, bell pepper, chilli and leek briefly in it. Then immediately add the peas and beans and deglaze everything with wine and water. Bring to the boil and stir in paprika and tomato paste. Let everything simmer for about 5 minutes over medium heat, then fold in the sausage slices and simmer gently for another 5 minutes over low heat.
  3. Test the potatoes. If they are cross on the outside and soft on the inside, they can be served with the sour cream ……….
  4. If you don’t like it that spicy, you can replace the pepper pulp with more tomato paste.
