Coffee Wreaths

The perfect coffee wreaths recipe with a picture and simple step-by-step instructions.

  • 250 g Soft butter
  • 250 g Sugar
  • 3 Eggs
  • 2 Egg yolk
  • 1 pinch Salt
  • 1 Organic lemon, zest
  • 500 g Flour
  • Granulated sugar
  1. Whip the butter, sugar and salt until creamy. Gradually stir in eggs and 1 egg yolk and beat vigorously. Then knead in the flour and lemon zest with the dough hook of the hand mixer. The result is a tough, sticky, greasy dough.
  2. Now roll out the dough in 3 portions between 2 layers of parchment paper about 3 mm thick. When all 3 portions have been rolled out, place them, including baking paper, on top of each other on a smooth, firm surface and place in the refrigerator for at least 3 hours. The individual portions must have become firm, immovable sheets of dough.
  3. Always take only one plate out of the refrigerator to cut out. Then first peel off the top baking paper, place it on the worktop and then put the dough sheet on top again with the bottom baking paper facing up. Now carefully peel off the second baking paper and cut out about 10 cm large, round, wavy circles from the dough sheet. Immediately place these on a baking sheet lined with baking paper with a little space between them and then cut out small, approximately 3 cm large, smooth circles in the middle. All of this has to be done quickly, as the high fat content makes the dough soft again quickly. Put the remnants of dough from the middle to the leftovers, knead again lightly, roll out again between 2 layers of paper and cool again until the dough has become a solid sheet. This is necessary because otherwise the dough cannot be cut out.
  4. Gradually bake the portions. You may want to take a break if the remnants of the dough that have been rolled out again have not yet become firm enough.
  5. Preheat the oven to 180 °. Mix in the rest of the egg yolk and spread a thin layer on the raw donuts. Generously sprinkle the granulated sugar over them and bake on the middle rack for 15-18 minutes until golden. Turn the heat down to 160 °.
  6. When they are ready, slide them onto a grid together with the baking paper and let them cool ……… or not ………….. ;-))). ….. a little good thing with a cup of coffee is always possible ……….
  7. The above quantity of ingredients results in approx. 38 pieces.
