Chocolate Rice Pudding on Mango Mirror

- 200 Milliliters Milk
- 1 teaspoon Sugar
- 1 pinch Salt
- 25 Milliliters Milk
- 1 teaspoon Cocoa
- 25 g Chocolate 70% cocoa
- 50 g Rice pudding
- 0,5 Fresh mango
- 1 teaspoon Powdered sugar
- 2 Centiliters Bacardi
- Heat the milk with sugar and salt. Mix the cocoa powder with the rest of the milk until smooth. Stir cocoa into the hot milk. Break the chocolate into pieces and melt it in the cocoa milk. Bring chocolate milk to a boil. Stir in rice and leave to swell on the lowest level with the lid closed for about 25 minutes. Stir occasionally.
- Peel the mango, cut into wedges from the core and dice. Puree together with powdered sugar and rum.
- Place the mango puree on a plate as a mirror. Arrange rice on top. Garnish with desiccated coconut and lemon balm
