Mango pudding …

  • 0,5 Fresh mango
  • 1 tablespoon Freshly squeezed lemon juice
  • 1 tablespoon Powdered sugar
  • 50 Milliliters Orange juice
  • 175 Milliliters Milk
  • 50 g Whipped cream
  • 1 tablespoon Sugar
  • 2 tablespoon Food starch

  • 100 g Frozen raspberries
  • 2 tablespoon Powdered sugar
  • 2 Centiliters Grappa

Mango pearls

  • 0,25 Fresh mango
  • 1 tablespoon Freshly squeezed lemon juice
  • 1 tablespoon Powdered sugar
  • 1 tablespoon Bacardi
  • 1 leaf Gelatin white

Serving

  • Raspberries
  • Fresh mango in wedges
  • Lemon balm fresh

Mango pudding …

  1. Peel the mango, cut into wedges from the core, dice. Mix the mango, lemon juice, powdered sugar and orange juice in a saucepan and bring to the boil briefly. Let simmer gently for about 15 minutes. Let cool down. Puree the whole thing and pass through a sieve.
  2. Mix the cornstarch with a little milk until smooth. Warm up the rest of the milk with the cream and sugar. Stir the mixed cornstarch into the milk. Bring to the boil while stirring. Fold in the mango puree. Allow to cool slightly. Fill in pudding or silicone molds rinsed with cold water and refrigerate.

Let cool down. Add the rum, puree and strain through a sieve. Heat the mango puree. Squeeze out the gelatine well and dissolve it in the mango puree. Cool down a little.

Serving

  1. Put the raspberry sauce on the dessert plate as a mirror. Turn the pudding out of the molds and arrange on the mirror. Garnish with raspberries, mango slices, mango pearls and lemon balm leaves.
